The wonderous Viola Odorata has a long and storied history...and in fact, flourished in greenhouses around the turn of the century in Dutchess County, New York during its height in popularity. The flowers, leaves and roots of this little gem have also been used throughout history, not only as an herbal tea but also as a medicine. In Toulouse, the French still make candied violets, as they have done for centuries, and as we use now.

To make this delicate confection we use essences of violet, which give our chocolate subtle floral notes and a hint of berry undertones.
